Ingredients
  

Shrimp Filling

  • 1 lb large shrimp peeled, deveined, and cooked
  • 1/2 cup mayonnaise or Greek yogurt for a healthier option
  • 1 tbsp lemon juice freshly squeezed
  • 1 tbsp celery finely chopped
  • 1/2 tsp Old Bay seasoning
  • 1 tsp Dijon mustard
  • to taste salt & black pepper

For the Rolls

  • 4 brioche or split-top hot dog buns
  • 2 tbsp butter melted
  • fresh herbs parsley, chives, or dill for garnish

Instructions
 

  • Boil shrimp in lightly salted water for 2-3 minutes until pink. Alternatively, sauté in butter and garlic for extra flavor. Drain, let cool, and chop into bite-sized pieces.
  • In a small bowl, whisk together mayonnaise, lemon juice, celery, mustard, and Old Bay seasoning. Add the chopped shrimp and toss until evenly coated. Season with salt and pepper to taste.
  • Heat a skillet over medium heat and melt butter. Toast the buns cut-side down for about 1-2 minutes until golden brown.
  • Fill each toasted bun with a generous amount of the shrimp mixture. Garnish with fresh herbs and an extra squeeze of lemon juice. Serve immediately with fries, coleslaw, or a light salad!
